Fresh is Best

I am incredibly picky when it comes to vegetables. It’s all about the texture for me. Most of the time a puree reminds me of baby food (except mashed potatoes, I love those). And any type of cooked cabbage or spinach is a hard pass. The slime….

And I CANNOT. STAND. CANNED. VEGETABLES. Frozen is fine, just not canned. It’s the smell and the consistency. I’ve tried using canned corn and canned peas and canned green beans… I just can’t do it. The only canned veg I use are tomatoes. Everything else has to be frozen or fresh. 

Which brings me to these beautiful garlic butter haricots verts.

Simple Garlic Butter Haricots Verts

Haricots verts are just fancy French green beans. They’re longer and thinner than “regular” green beans (isn’t everything from France thinner?), and they have a lot more flavor. So, basically, they’re better.

This is great news for us because that means less cooking and less fuss. My favorite way to dress up haricots verts is with nothing more than garlic, butter, salt and pepper. That’s it, that’s all.

The garlic and butter make a creamy, pungent, almost sweet sauce that beautifully balances the fresh, earthy flavor of the green beans. 

When you’re using really good and really fresh vegetables, most of the time you don’t need to add a lot. You want the flavor of the vegetable to shine, and it definitely does in this dish.

Tips for Making Garlic Butter Haricots Verts
  • Haricots verts cool off very quickly, so it’s important to serve them immediately once they’re done cooking.
  • If you would like to make the green beans ahead of time, so you’re not doing everything when company arrives, place the cooked beans in a bowl of ice water after they’ve boiled. This is called blanching and will stop the cooking process. Simply drain the cooled beans and set aside.
  • Once you’re ready to assemble everything, melt the butter and saute the garlic. Then add the blanched green beans and serve. It comes together in about 5 minutes. Perfect!
How Should I Serve Garlic Butter Haricots Verts?

My favorite way to serve this side dish is with grilled chicken that’s been marinated in lemon and olive oil. It’s so good together!

I also love serving these green beans for holidays and special occasions – so with roasts, baked ham, salmon, or even meatloaf. They also work well with and complement other side dishes like roasted or grilled vegetables, mashed potatoes, baked sweet potatoes… the list goes on!

There really isn’t a “bad” or dish to serve these green beans with. They’re so versatile and easy to make.

Garlic Butter Haricots Verts

Ingredients
  

  • 1 pound Haricots verts (French green beans)
  • 4-5 garlic cloves minced
  • 6 tablespoons unsalted butter
  • ½ teaspoon kosher salt plus more to taste
  • ½ teaspoon cracked black pepper plus more to taste

Instructions
 

  • Place green beans in a large skillet or sauté pan and add water until beans are just covered (about 1½ - 2 cups of water). 
  • Cook over medium-high heat until water comes to a boil. Once boiling, cook the beans for 1-2 minutes. Green beans should still be firm and bright in color. 
  • Drain the green beans and water, set beans aside.** 
  • In the same skillet, add butter and melt over medium-high heat. Once melted, add the minced garlic and sauté until fragrant, about 30 seconds to 1 minute. 
  • Add the green beans back to the pan and toss in the garlic butter. Sauté the beans for about 3 minutes. Season with salt and pepper, adding more to taste if needed. 
  • Serve immediately. 
  • Cooked green beans can be stored in an airtight container in the refrigerator for 3-5 days. Reheat in microwave for about 45 seconds to 1 minute. 

Notes

**If you would like to make the garlic butter haricots verts ahead of time, follow instructions through Step 3. Then place the cooked beans in a bowl of ice water. This is called blanching and will stop the cooking process. Simply drain the blanched green beans and set aside until ready to use.
Once you’re ready to assemble everything, following the remaining instructions using the blanched green beans (Steps 4-6). It comes together in about 5 minutes.
